For some reason, I have recently developed a love of beetroot. I think I can pinpoint the exact moment as the time a friend of mine gave me an AMAZING salad with beetroot in; or the time I got beetroot soup (because of the colour) and discovered it was tasty as well! Most alarmingly, I found myself eating pickled beetroot straight out of the jar the other day. It shouldn't be that surprising - I am the sort of person that will eat anything, and I like about 98% of it (still working on finding the point of celery's existence) but this has all happened very suddenly - I was pretty indifferent to the vegetable before; to the extent that one year when I didn't really want to give things up for lent, it was included in the list of things I never ate anyway. I am now considering the use of it in baking. So I think, for now, the little blighters are here to stay!
